The Leaves are vibrant, the air is crisp, and pumpkins are ripe in the fields. In countless households across America people are transforming pumpkins into jack o'lanterns and having a great time doing it! Those seeds that you scoop out and throw away are packed full of healthy fiber, great oil, vitamins, and minerals that are essential to a healthy diet. 1-2 Tsp of your preferred oil (olive, coconut, butter.)
savory seeds--pinch of salt and pepper, or pepper and curry, or soy sauce.
Sweet seeds---try cinnamon and brown sugar, ginger and honey, or cardamom and your sweetener of choice.
oven should be between 300-325* for 30-45 min or until the seeds are crunchy.
serve warm or put into air tight containers and they should keep for 1-2 weeks.
